Brewing Guide — Gongfu Style
- Step 1 — Warm the vessel: Rinse your gaiwan or teapot with boiling water. This activates the tea's aroma and removes any residual odors.
- Step 2 — Add tea: Use 7–8g per 110ml gaiwan (ratio 1:15 tea to water)
- Step 3 — Quick rinse: Pour boiling water over the leaves and discard immediately (5–10 seconds). Do not drink this infusion — it awakens the tightly rolled leaves.
- Step 4 — Brew: Pour 100°C (212°F) boiling water in a steady, controlled stream. Steep for 30 seconds.
- Step 5 — Pour completely: Decant all the liquor into a pitcher or cups. Always pour out fully — any remaining liquid will over-steep and affect subsequent infusions.
- Subsequent infusions: Add 10 seconds per steep; 6–8 infusions total
- Vessel: Gaiwan or small Yixing teapot
- Water: Filtered or spring water at 100°C — full boiling temperature is essential for Tie Guan Yin
