How to brew it
Steps to Brew Wuyi Rock Tea (White Gaiwan)
Prepare utensils: Use a 100-120ml white porcelain gaiwan, paired with a fairness cup and small tasting cups. Preheat all tools with boiling water first.
Add tea: Put about 8g of Wuyi Rock Tea into the preheated gaiwan (roughly 1/5 of its capacity).
Awaken tea: Pour boiling water over the leaves, then drain immediately (within 3-5 seconds) to activate the tea.
Brew:
- Pour boiling water along the gaiwan’s inner wall until 80% full, ensuring leaves are fully soaked.
- Steeping time: 8-15 seconds for 1st-3rd infusions; add 5-8 seconds for 4th-6th; add 10-15 seconds per steep after the 7th (quality tea yields 7-10 infusions).
- Serve: Use the gaiwan lid to block leaves, pour tea into the fairness cup, then distribute to tasting cups.
Water temperature: Use 100°C boiling water throughout to fully release aroma and flavor.
Storage of Wuyi Rock Tea
Container: Use airtight ceramic jars, tin cans, or double-layer paper bags (avoid plastic to prevent odor absorption). Ensure the container is dry and odor-free.
Environment: Store in a cool (15-25°C), dark place with humidity below 60%. Keep away from sunlight, kitchens (steam), and bathrooms (moisture).
Avoid odors: Keep away from strong smells (spices, coffee) and store separately from other teas.
Do not refrigerate/freeze: Sudden temperature changes may cause moisture. Seal tightly for short-term storage; use porous clay jars for aging (monitor for mold regularly).
Properly stored, it retains quality for 1-2 years; premium tea may improve with age under ideal conditions.
