How to brew it
I. Gaiwan Brewing (5g Black Tea, 3-Second Infusion)
Tea Ware Preparation: 100-120ml gaiwan, fairness cup, tasting cup, kettle.
Steps:
- Warm the ware: Rinse the gaiwan and other utensils with boiling water, then drain.
- Add tea: Put 5g of black tea into the gaiwan.
- Brew: Pour in 95-100℃ hot water. For the first infusion, quickly rinse the tea (3 seconds) and discard the liquor. From the second infusion onwards, let it steep for 3 seconds after pouring water, then decant the liquor into the fairness cup and serve. You may extend the steeping time by 1-2 seconds for subsequent infusions depending on the flavor.
II. Teacup Brewing (5g Black Tea)
Tea Ware Preparation: 150-200ml lidded teacup, kettle.
Steps:
- Warm the cup: Rinse the teacup with boiling water, then drain.
- Add tea: Put 5g of black tea into the cup.
- Brew: Pour 95-100℃ hot water to 70% full. For the first infusion, quickly rinse the tea (3 seconds) and discard the liquor. From the second infusion onwards, cover the cup after pouring water, then uncover and pour out the liquor (ready to drink) after 3 seconds. You may extend the steeping time by 1-2 seconds for subsequent infusions as the flavor fades.
