Suggested Gongfu brewing starting point:
Use one 8.3g sachet in a 100–120ml gaiwan or small teapot; adjust to taste.
Water: 95–100°C. Use water near boiling for a fuller expression of the tea's body and rock character.
Warm the teaware before adding the leaves.
Begin with a quick infusion of approximately 5–10 seconds, then decant completely. Keep the early infusions short and gradually extend later infusions as the leaves open.
